Avocado on Toast with a Poached Egg

Avocado on toast is apparently the most Instagrammed breakfast ever. I suppose it makes sense – all that green with a little flash of red from some chilli flakes, or a slick of yellow egg yolk is very photogenic. It has appeared on my own Instagram many times as it is my favourite, favourite breakfast. Everybody has their own way of making it, but mine is as follows: slightly cooled granary toast, roughly mashed (not puréed) avocado, sea salt, chilli flakes and a little squeeze of lemon or lime. The poached egg is optional, as is bacon, feta, roasted tomatoes… you get my drift here.
