Cherry, Almond and Coconut Granola (Vegan)

My love of granola knows no bounds.  Last night, during the early stages of the election coverage, where nothing much happens, I made up a batch of cherry, almond and coconut granola. After a very late night and not much sleep, I had some with sliced banana and vanilla yoghurt. Just had to try to stop myself falling asleep in it.

Cherry, Almond and Coconut Granola

300g rolled oats
100g flaked almonds
100g sunflower seeds
30g pumpkin seeds
1 tsp salt
½ tsp ground cinnamon
1 tsp vanilla extract
120ml sunflower oil
120ml maple syrup
100g dried cherries
100g desiccated coconut

Preheat the oven to 150ºc and line two baking sheets with greaseproof paper. In a large bowl, combine the rolled oats, almonds, sunflower seeds, pumpkin seeds, salt and ground cinnamon.  Add to this the vanilla extract, sunflower oil and maple syrup.  Stir until fully combined and spread in an even layer across the two baking sheets.

Bake in the oven for 25 minutes, stirring halfway through. Allow to cool a little on the trays before transferring to a large bowl. Stir in the dried cherries and desiccated coconut. Store in airtight jars and it will keep for a few weeks.
